Raclette - The basic recipe

Ingredients for 4 people:

800g small potatoes
800g raclette cheese, cut into slices

 (You will need approx. 200g raclette cheese and approx. 200gsmall potatoes per person.)

Classic side dishes:
Gherkins, silver onions, garlic, mixed pickles, pepper, paprika

 

The preparation:

Only scrape off the rind of the raclette cheese, never cutit away. It becomes nice and crispy when it melts and is very flavourful.

You should not leave the raclette cheese in the oven for toolong to prevent the fat from separating out.

 

Below you will find some ingredients that you can combine with raclette cheese.
You can also create your own raclette recipes - there are no limits to yourimagination!

 

-       Gratinate "Rösti" with raclettecheese. The rösti should be fried in a pan beforehand.

-       Diced bacon and onion rings

-       Pork fillet cubes, chicken in strips, etc. Themeat should be browned in a pan or on a griddle beforehand.

-       Fresh tomato slices, oregano and basil

-       Sweetcorn kernels and ‘Ghackets’. Season themeat beforehand and fry in the pan.

-       Fruit such as pineapple, pears, apples, peaches,raspberries, etc.

-       Vegetables such as peppers, asparagus,courgettes, olives, spinach, mushrooms, broccoli, avocado, etc.

-       Prawns, cod, anchovies, etc.

-       Gorgonzola. Place a small piece of it on theraclette cheese and melt
